Nasty fiends for children running around in short socks, but stinging nettles have an unexpected side to them. They are delicious, and the main ingredient in many springtime recipes.
WHERE TO FIND THEM?
- Beside hedges
- In damp areas close to dwellings
- In fields close to water
WHEN TO PICK THEM?
Don’t forget to put on gloves before you begin! Nettles can be harvested from April to September, cutting them at 10cm above the ground.
USES IN THE KITCHEN
- Trim the leaves from the stems of the nettles and wash them in cold water.
- Boiled nettles are a delicious base for a frittata or savoury tart.
- Toss the nettle leaves in a pan with garlic and oil, add a little vegetable broth and parmesan cheese and you have an excellent base for a pesto, a filling for ravioli or a sauce for risotto.
